Hi everyone!

I'm looking for a recipe for a dense Red Velvet cake to be used on a 3 tier Topsy Turvy... This will be my first TT cake and I'm kind a nervous... They requested Red Velvet so i don't know if a regular recipe is good to hold its shape. I have reading on tips about not baking a moist cake because it can brake down and apart; plus you must have good dowels for support.

Hi,

What kind of topsy turvy cake you'll be attempting? The wedges-in-between-tiers kind or the carve-and-insert-into-the-bottom-tier kind?

I would think, if your topsy turvy is done with wedges in between tiers, the it should be ok to use RV.
From others' experiences that I've read, RV is a risk to use when you'll be carving the cake.
Having said that, I remember years ago when I first learned how to bake RV, the instruction said, to really gently mix the batter, as to not having a dense RV cake by overmixing.
So I guess, you may get a dense RV if you overmix it (I dunno I never tried). Btw, this is for scratch recipe, not sure if overmixing a boxed mix would result in a dense caje, since I only bake from scratch.

Cakeman ravens recipe is good and very dense. Its a bit on the oily side to me though so I use less oil than called for

I use the Red Velvet Redux recipe. It's on this site. It really good too.

I just use the WASC recipe and sub with a red velvet cake mix and I also add 2 tablespoons cocoa powder to bump up the flavor a little. It makes for a really dense cake. I've never done a topsy turvy cake, so I'm not sure how that will go! I guess you just have to try a few recipes to see what works best for you! thumbs_up.gif
