Fat Daddio's - Square Cheesecake Pan

Hello Cakers,

I recently purchased a Fat Daddio's square cheesecake pan; used it this weekend to make a coffee cake (the sides got a litte too well done); but I digress. Has anyone here actually made a cheese cake using one of these square, removable bottom pans? I'm thinking that perhaps it would be a good idea not to put a bottom crust on it.

I'm looking for input -- anyone out there have any experiences that they would like to share? Thanks

I've not used Fat Daddio's pans but I do have a couple square German pans. I have made a crust and put it up the sides even. I have had no problems with it. The bottom does remove from the sides and is held in place with a latch to keep it all secure.
