I have a bride who wants a cake with a brush embroidery design of red tea roses and green vines trailing around the cake on all four tiers. I have done brush embroidery before, but its not in my usual bag of tricks. I know that I will be a bit slower because of this, but I'm wondering how to charge for that level of hand detail work on the cake. I'd say that 1/3 of the cake will be covered in the flower design and the cake is a 14/10/8/6. (and get this, their wedding is only for 30 people! She wants a big cake and her fiance does too)

so my questions are:

. do you charge by hour and estimate the number of hours that this will take?

. what is a good hourly charge for brush work?

. for a reasonably skilled decorator, how long should this take?

thanks!
