I have a small cake decorating business and I do a few cakes per month. I have recently started making more modeling chocolate figures. A few times I have used toothpicks as internal supports. When delivering the cake, how do you let the customer know. Do you have them sign a "cake release". Do you count the number of "supports" and list it? Do you just tell them and trust everyone will know?
I am always reading this forum and I know its a big question, so before anyone asks, I have a legal business (with insurance etc.) Just wondering what everyone else does with this issue?
I have heard of using spaghetti, does this work? Not as dangerous as toothpicks, but I'm sure it still wouldn't be good to bite into
Technically, once you hide the toothpick inside the figure, the figure is no longer considered edible........
I use spaghetti or bucatini as internal supports for my figures. I tell people that it's in there, but I don't worry about it because, although hard, it's food and completely digestible.

Spaghetti does work but it is much more fragile than toothpicks. If you do use toothpicks cut the tips off and definitely warn your client with a little note on your contract. If contract s signed send an email so you have proof that you communicated this info. Most people will not eat the characters anyway unless there are children present, or alcohol involved they usually end up on someone's trash or on their shelf. I have a little old lady that has some birds I made from fondant almost 2 years ago sitting on her shelf like a knick-knack!

Ditto this!
I've used spaghetti in fondant figures many times. It gives me piece of mind not worrying about someone biting into a toothpick and hurting themselves.
Spaghetti fan here too. I do tell customers that there is spaghetti holding things together or pierced into the cake, just in case someone decides to bite the bunny's head off...
