I'm going to be making some jar cupcakes and taking them on a 5 hour trip. I noticed that the last icing I used on cupcakes tends to want to slide off the tops of the cupcakes without a whole lot of persuasion. I typically just use a simple buttercream recipe.
Any ideas on the best kind to use so this doesn't happen? I'm not sure if using the jar will make a difference or not, but since the buttercream I use does crust, maybe having a lid on the jar will keep it from doing that and may not slide? Just looking for some tips. Thanks so much!
I've never had a problem of icing sliding off, unless the cakes are still too warm! All I can think is make sure your cupcakes aren't domed so you have a flat surface to pipe onto?
I can't offer any other idea i'm afraid!
No problem! Thanks for posting!
I guess I should say that it's not like the icing wants to slip right off of them... it's more that it is easily pushed off in one chunk.
My guess is the issue is caused by travel and the movement just sort of vibrates the icing off if everything's not perfectly level. You could try cutting a small hole in the top of the cupcake and fill it with icing then continue to swirl the icing up like normal. That way the icing on top has something down in the cupcake to hold on to.
Maybe your icing is too firm and is solidifying into one piece without attaching to the cupcake? Don't know you recipe, but a combo of less sugar, more liquid should do the trick.
