So I am still practicing flavors of cupcakes that go well without icing and I thought I was almost done until today I had an amazing strawberry cake. I didn't think to ask for the recipe until after I left the restaurant.

I looked through the recipe lists on the forum but didn't see any plain strawberry cupcake recipes.

I was contemplating using a basic yellow or white cake and blending in strawberry puree. I was also wondering if anyone has ever made a chocolate/strawberry cake swirl?

Thanks!
Leslie

The book, "The Cake Mix Doctor", by Anne Byrn, ISBN-10: 0761117199 has two recipes for strawberry cake using fresh strawberries.

I just tried one of them that had coconut, pecans, and fresh strawberries, made with white cake mix. It was VERY moist and crumby, especially with the coconut and pecan bits. (I could barely taste the coconut.) If dusted with powdered sugar, it would be lovely. The recipe I made was an 8"x4" torted round cake, with the buttercream frosting she recommended which also had fresh strawberries, pecans, and coconut.

This evening I'm going to try the second recipe which doesn't call for coconut or pecans.

If you don't have that book, run, don't walk, and buy it!

Leslie, I tried to upload a pic of the cake and slice, but couldn't get it to load. If you wish to see a pic, send me a private message and I'll email it to you. I also have a picture of a method of using strawberry sleeve filling that you could swirl in a chocolate cake.
