Opening A Bakery - Istanbul, Turkey

I am a self taught baker who lives in Istanbul Turkey.
I currently run a cupcake business by order baking from my house & I am looking for shops so I can start a small bakery.
I specialize in cupcakes but also plan on selling cookies & brownies.

Could anyone give me advice on kitchen equipment?
I use 2 stand mixers. 1 Kitchenaid 4.5 lt & 1 Kenwood 6 lt. I am planning on using them both at the bakery as I guess I would be baking 100 - 150 cupcakes a day max. & about that much cookies. At least to start with.
What kind of oven would you recommend?
I was thinking a convection oven but when I searched around I came to the conclusion that maybe a convection oven isn't the way to go.

Any advice is welcome.

How exciting for you! Sorry, no advice to help with your questions, but if I lived in Istanbul, TurkeyI'd be opening a wedding-cake only storefront. I've read that Istanbul is the actual wedding cake capital of the world with 166,000 annual wedding ceremonies performed while Las Vegas, Nevada only performs 114,000 annual wedding ceremonies.

Have you considered offering wedding cakes?

There are alot of places that do wedding cakes. Mostly they are storefronts like you said and alot of people do it online.
I do not like working with sugarpaste.
I don't use additives or food coloring. It has more of a all natural feeling.

But there are no american style bakeries.
Cupcakes at weddings are becoming popular.

Did you ever go ahead and open your shop?

I am in a similar position in another part of the country and will be needing advice.
