For all of those who have the Sky High cakes book. I was wishing to try this cake to take to a house warming party I'm going to this weekend. I don't have much time for trial & error. What do you think of it?

I made the Sky High Pina Colada cake as a test of several recipes for a very large anniversary cake. I decided to go with another recipe but not because Sky High wasn't delicious. The cake has a brown sugar base which makes for a deep and very sophisticated taste. My customer wanted an "in your face" pina colada taste and Sky High's is much subtler and complex so I opted for something different. If I were making the cake for myself, I certainly would use the Sky High recipe.

On further note, I suggest you make a test of the frosting in advance. I haven't but I had a disappointing experience with Sky High's Peanut Butter Buttercream frosting (for that Chocolate Peanut Butter cake). The frosting isn't particularly stable and after about 4 hours at a party it began to sag. I don't care for my cakes to be too cold when served so it presents a dilemma as to how soon to take the cake to room temperature.

Good luck with your house warming cake and let us know how it is received.
