Frozen Cupcakes Please Help!!!

Hi all,

I had an order for 30 cupcakes and 12 mini cupcakes. I had them baked and ready to decorate when the party was postponed because of a tornado that hit the town the party was being held in. I have stored them in the freezer for 3 weeks and need some advice on how to decorate them. Some will have a strawberry buttercream frosting (which I also had to freeze) on top and some will be dipped into a glaze. My question is, do I have to let them thaw before decorating them or can I decorate them right from the freezer? Also do you think the strawberry buttercream icing will be ok to serve?

Any suggestions will be greatly appreciated.

I tried once to decorate frozen cupcakes, and while they were thawing, the icing slid right off! So I would recommend thawing them first, they do thaw very quickly!

I have decorated right out of the freezer, before any condensation forms, but just a simple swirl. If you let them that first, be sure to leave them in whatever wrapping until they are completely thawed so that any condensation stays on the wrapping, not the cupcake.

And the butter cream will be fine, just whip it up a bit before you use it!
