Red Velvet Help

My niece wants a red velvet cake for her birthday on Saturday. I've got the decorations all figured out, but the cake itself is what I'm struggling with. I have always done doctored cake mixes with pudding added to the mix, but I'm not sure what type of pudding to use in this mix. Help please?

Red velvet cake has a slight chocolate hint to it--so you could try chocolate pudding....but I think vanilla would also work. You may need to add extra red color, though. I keep having to make red velvet armadillos....have dyed my hands red more than once. Good luck!

The best pudding is the Jello White Chocolate pudding--NOT the sugar-free--if you can find it. I get it at WalMart SuperCenters. My next choice is Jello Milk chocolate pudding.
