For All Those Who Do Cookie Bouquets (Not A Price Question)

For those who make and sell bouquets on a fairly regular basis, i have some ?'s
I'm just starting out my bouquet business in Alberta and I need some advice:

1. Where do you order your sticks? Micheals is NOT the cheapest
2. Do you use flower foam to keep your sticks in place. I do but was wondering if there was a cheaper alternative. do you order this online because WAlmart and Micheals are still $ for the amount i'm buying.
3.I hate cellophane, wrapping mu bouquet takes me almostaslong as making it.
4. How do you do it?! For 3 weeks in a row i've had orders due (about 96 cookies each week) and i've been up till 2am alot baking, decorating and packaging. There has to be a better way. Do you only offer set bouquets with minor alterations? or is each one custom? do you freeze a bunch of the most popular cookies? iced or un-iced? I'm going to start offering vmas cookies in a monthish and at this rate if i get more than 96 cookies a weekend i'm screwed!
