Coconut Filling

I have been looking everywhere I can to find a coconut filling without coconut flakes. Tried a couple recipes from here and just left out flakes. If anyone has a recipe they would share, I would be so appreciative.

I've usd coconut flavored pudding mixed into cool whip and added a few drops of coconut extract. Sometimes the coconut pudding is hard to find but I have a friend who gets it for me from a latin grocery store. I hope that helps!

I have a recipe that is outstanding, but a little labor-intensive, as it is a custard/pastry cream base. It is a core recipe so I am not sharing publicly. If this is what you want, pm me.

I've done a coconut pastry cream using coconut milk instead of regular milk. Just sub it out for the same amount.

The other is using coco lopez coconut cream in place of the liquid in an American butter cream, and then adding coconut extract if the flavor isn't strong enough.
