I have just had thee most incredible cake experience that you could possibly imagine. I was approached by my boss (of all people) to do a cake to represent our company in our local cake auction for charity. I said sure I would do it. I have done them before and enjoyed the experience. But last night was the night from Heck, and I kid you not.

I decided I was going to do a butter pecan cake with white chocolate ganache and butter cream filling. Sounds simple enough right. Wrong. First I forgot to get a large enough bag of pecans to do cake and filling. I only got a small bag for the filling. Ok, so I'll just do a yellow cake with butter pecan filling, no problem. Then I didn't have enough ganache made to decorate the whole cake, so I decided, ok I'll just make butter pecan white chocolate ganache for the filling and cream cheese frosting over the cake. This is where everything went downhill. I have had bad experiences in the past with cream cheese frosting and fondant, so you would have thought I would have learned from this experience. NO. I went right ahead and put that cream cheese frosting under fondant and yep you guessed it. The fondant started sliding right off the cake. So I fixed it, and it actually looked better then it did in the first place. I finished up at 2:30 this morning. I get up at 4:30 to go to work and to deliver the cake. The fondant is laying in a heap at the base of the cake. I didn't know what to do, so at 4:30 this morning I was fixing the disaster of a cake. Now I'm late for work, but the cake is sitting in an A/C office, so it should be fine. NO. At 9:00 I get called in the office, because once again everything is headed south on this cake. So I fixed it again. It had to be at the auction place at 10:00. I'm freaking out. When it was finished I said I never wanted to see that cake again. I didn't even go by the auction place to see if anyone casted any votes for it. I will never do fondant over cream cheese frosting again. EVER! I don't care if someone begs and pleads. So, with only 2 hours sleep, I still can't see the humor in it, and I can't post pics, because I can't find the connection cable for my camera. Oh, and did I mention that everything went wrong at work today too. I need a stiff drink, and I don't even drink.

Thanks for letting me rant.

Oh and by the way, I loved my white chocolate butter pecan ganache so much, I posted the recipe here if you would like to try it. It was the only good thing about the whole experience.

Sorry to hear that! I hope you have a better weekend. I bet the cake was delicious, even if it didn't turn out right.

UGGHHH! Sorry you had such a horrible time. I've had those all nighters where I felt like just giving up completely.

I've read on here before about fondant over cream cheese icing and how that's a no no. Thanks to people like you who tell us about these disasters, we can at least be forewarned.

I do feel for you though. I agree with Norasmom, it sounds delicious!

Hope you have a good weekend after everything today. Get that stiff drink...for me it is a HUGE glass of Pepsi...and sit down, put your feet up and try to relax.

Well I don't drink, and it's probably a good thing after the day I had. But I do intend on going camping this weekend and just chilly out around the campfire. No cakes, no auctions. Just me and a couple of marshmallows and a Mountain Dew.

Oh poo!! I am so sorry!! I think I would have broke into tears by that point LOL! I feel your pain with the cream cheese frosting....I have given up completely with decorating with the stuff...just offer it as a filling, but probably for not much longer because with the humidity around here, as soon as it comes out of the fridge BLOW OUTS EVERYWHERE!! I don't have that much of a problem with just a buttercream cake either UGH...Relax, have a nice weekend....and kick that cream cheese out the door hahah!

i learned a cool trick a few yrs ago. there is a company called amoretti, and they sell all kinds of extracts, oils, and flavorings. they make a cream cheese extract, and you can add it to buttercream. it's cheating i know, but if smebody is set on cream cheese frosting, just add it to buttercream, and then u can use it under fondant.
