Cream Cheese Frosting Under Fondant?????

Hey everyone,

So, I am making a carrot cake with cream cheese frosting, and covering it in fondant and decorating. I have never done this with cream cheese frosting. And I know that some cakes can't sit out in fondant like others can, is this one of them?

Do I need to refrigerate the cake, once its iced with cream cheese frosting and covered in fondant???

Help! Don't know whats the best thing to do.

Yes, you will need to chill the cake using cream cheese icing.

Make your cake and frost it as EARLY as possible - I just did a cream cheese frosting under fondant, and it was extremely difficult, since my cream cheese frosting would never harden.

Once it's done - definitely refrigerate. You'll get some condensation on the fondant when you take it out of the fridge, but it should go away within an hour or so (and in the meantime will just give it a glistening "dewy" finish icon_smile.gif )
