Can I Freeze A Fully Decorated Cake?

Ugh! I just finished a cake for a luncheon my husband is having at work. Then received notice that it has been moved from tomorrow (Monday) to Thursday. The cake is done. It's decorated and filled with buttercream. Can I freeze the whole thing and it still look ok when thawed? Do I have to cover it somehow if I freeze it? And how long can I freeze it for before it goes south? Thanks for your input! I know the wealth of experience around here will help me on this one! icon_cry.gif

Fully decorated cakes are shipped frozen by wholesalers all the time... just box it up, it will freeze well.

First anniversary cakes are frozen for a year... they need to be wrapped well and/or in air-tight containers.

I don't like to, but I have successfully frozen and thawed fully decorated cakes when necessary. When I know that I'm going to need to freeze, I anchor the cake (sitting on a cake circle) to another cake circle or board that is large enough to prevent all side decorations from hitting the side of the box. The put that into a box and close it up securely. Wrap the whole box (still at room temperature) with multiple layers of saran wrap. I probably end up with 6 to 8 layers. If its going to be in the freezer more than a week, I also wrap it in two layers of aluminum foil. Remove it from the freezer the night before it will be served, leaving it wrapped. Then I remove the wrapping several hours before it will be served to let any moisture evaporate and the fondant firm up.


It's a bunch of work, but the cake comes out okay icon_smile.gif

Thank you so much for your advice. The cake is in the freezer, and thankfully so! The luncheon was moved again! They're taking it Friday, party or not. icon_wink.gif
