Never made filled cupcakes before. What's you best filling? Help. Needed for a bridal shower and want to knock their socks off.
What kind of cupcakes are you making? Are you considering a custard-type filling, jelly, chocolate, curd, etc.? There are so many good fillings, it depends on whether you want the kind where you core the center of the cupcake or if you want to inject it, for starters. So many options, all depending....
I agree with Dangerous cupcakes, the possiblities are endless. Some times I will take my SMBC and add flavorings to that and use those for fillings too. I use LoAnns flavors because you don't need a lot. I make my own purees and curds too. Sometimes I put candy in the middle and bake my cupcakes. (Don't do malt balls, tried that and they get as hard as rocks ). Just experiment and have fun. Look on the internet for suggestions. HTH
There's also the sleeve fillings in a variety of flavors, they're easy to use, don't need refrigeration and taste good. They're available at Country Kitchen, just search fillings.
Thank you to all who have given their input. Right now I'm looking for a creamy filling and a fruity filling. Any I should stay away from. I would like to make a couple different types of flavored cupcakes with filling. What do people like. I really never eats cupcakes myself and have no idea what is popular. Coming down to the whre and needs to start baking tomorrow nite. Really could use some direction. What are your favorite combinations?

Also, lemon cupcakes are light and refreshing and seem to be more popular than orange. You can put some lemon curd inside as a filling -- the curd can be store bought or homemade.
Chocolate cupcakes with a bit of whipped ganache in the center is delicious.

Hi I sometimes add coffe instead of chocolate to butter cream, its yummy and makes a nice change.
What about Baileys buttercream. Thats really nice and ideal for a grown up party
I made some recently with the chocolate ganache somebody suggested and that is really nice.
My biggest seller is peanut butter buttercream filled.... my second biggest seller is raspberry filling
I agree with the ganache too. I really like pineapple or orange curd. It's a good way for me to use up yolks that I have since I like to make SMBC I think there's a thread too with recipes. I'll see if I can find it.
I use SMBC and can add just about anything to it. It doesn't like water based flavorings though, because of all the butter, but just last night, not knowing what to do for a flavor, I added some juice from some frozen strawberries that I had frozen for my own home use, and with a little work, the filling turned out great! It really surprised me how it could flavor the SMBC
