Hi everyone! I have done a couple carved cakes but have yet to find the best recipe for them. I dont want to just use pound because its usually a little dry. I would appreciate any help! Thanks!

I use a lemon madeira sponge cake, its always light and moist but firm enough to carve.

I used doctored cake mixes. Actually I've used un-doctored cake mixes as well.

I have used regular cake mixes. I have better luck with chocolate. It seems to be more firm than others. I also put it in the freezer for a little bit to firm it up, but not to freeze. This also worked well for other flavors, but I still shy away from them. I did a pillow in white and it just didn't seem to hold up as well.

I use the WASC recipie its very sturdy and but never dry!

Ditto on the WASC, I also use a cream cheese and chocolate cream cheese pound cake for more intricate designs! Those are nice and moist for me icon_biggrin.gif Plus you can brush on a simple syrup for more moisture and flavor!

Is the recipe for the WASC you use on here? There are several recipes. I am also interested in the chocolate cream cheese pound cake but there are several recipes and I need one that been proven. No time or extra cash to test it! Thanks again!

For carving, I ALWAYS use a version of one of two recipes on this site: either the Firm Chocolate cake or the Durable for 3D cake (vanilla). Not only do they work extremely well for carving - they are also ones that I get the most requests for because they taste great!

the durable chocolate cake for 3D cakes on here is excellent for carving..Very sturdy and has a nice dense chocolate flavor and no crumbs.
