I made my first homemade cookie dough today, and didn't read through one step before skipping to the next. I thought I had read it all but got carried away with my cookie cutters and before I knew it I was reading the word 'again' so it made me go back.

It says to wrap the cookie dough up in plastic wrap and stick it in the fridge for 1 hour before cutting them and chilling again for another 30 min. What happens if I skipped the step of wrapping it up and chilling for 1 hr? Will they not turn out right? Ty in advance

Edited to add- I could have taken them out, re rolled and re cut, but they're just for us so I'm not too worried if they don't come out great. Would just like to know for future reference

Chilling cookie dough does a couple of things for it. It helps it to roll out without sticking, so you don't have to use as much flour in the process, so the cookies are lighter and crisper. It also helps the fat stay mixed with the rest of the dough, so they turn out nicer for that reason, too. BUT - your cookies will probably be just fine even if you didn't do this. Just try it the next time you make this recipe and see if you don't like them better.

That makes so much sense to me lol. While I was cutting them and moving them over to the pan, there was grease all over my hands and on the wax paper I had rolled them out on..just figured it was from the butter lol. Ty!

Will definitely follow that step next time and see how they turn out with that extra hour
