Hi Everyone,

Myself and my business partner have a shop in Ayrshire, Scotland, and we try to keep up with the latest cake trends. I was wondering what everyone's thoughts were on new, up and coming trends? Cupcakes are still the big thing here, as well as whoopie pies. We are only just starting to get interest in cake pops, so I am looking forward to trying them out. I just thought it would just be interesting to hear about trends in other countries etc.

I find, here in the southern portion of the USA, that cake pops have run their course...when you see the ladies at the church potlucks bringing them as their 'fancy' dessert contribution, it is time to go to the next level. The pop-up cupcakes in a tube are becoming almost passe!

Personally, I look to you in the European Union, as well as Great Britain, for the new trends in cooking. I see the trend possibly going towards layering flavors, as they do in the Austrian pastries...less fat and less sugar, but intense flavors. Here in the USA we over-sweet our desserts...so many obese people as a result!

I think the freezing of parts of food is a trend which will be blossoming, as well as serving sizes. Hope that helps!
* Maybe we need to be looking at the trends with a totally different perspective...go back in time, instead of the future.

I agree with lutie. Your lost arts are finding their way back into American baking. European buttercreams, macarons, mud cakes. In my opinion, these old world artisan baked goods are our future. Can you believe our customers think these are new?
