I'm decorating a cake tonight for delivery 8 hrs from now. The top tier is red velvet cake with cream cheese icing. I really need to put the whole cake together tonight. It will have fondant accents on it, so I really don't want to put it back in the fridge. With the heat and humidity right now, I'm afraid of what will happen to the fondant- and cake for that matter. Will the cream cheese icing be ok sitting out overnight in an air-conditioned room? Any suggestions? Thanx in advance...

i make red velvet cake w/cream cheese frosting all the time.
to be safe the cake should be refrigerated especially with the heat we've been having.
i dont know if just being in an air condtioned room will be enough.
but i also know when i decorate my red velvet cake it can take me hours and its not refrigerated during that time. although i will put in fridge half way through decorating just to firm up again.
its a tough call, im sure others will have more concrete advice to you.
i guess im really no help here....sorry
