I saw a post on Saturday for a mint chocolate chip ice cream cake where the ice cream, when melted, takes the place of the wet ingredients, except for eggs. I found the recipe and made the cake, but now I have a question; does it need to be refrigerated? Do the "spoiling" qualities of the ice cream "cook out" or remain? I don't want to make anyone, especially my family, sick. Any advice would be greatly appreciated!!

And, just in case you are interested, I used Coffee Fudge Brownie ice cream with chocolate frosting. It was YUMMY!!!

Ice cream is generally what? Eggs, milk and sugar? If you put eggs and milk in a cake and baked it, then you wouldn't have to worry about putting it in the fridge.

So my uneducated answer, would be that it is fine left out.
