Can I Cut My Base Layer In Half For Transport?

I have been asked to bake my sister's wedding cake. Time before the wedding is limited. We have a 20 hour drive to get to her place. Some bakers on this forum suggested that I bake and freeze the cakes before we go out of town and store them in a cooler. This plan make sense, until I started getting things together this evening. My bottom layer is a 16 inch square. It will not fit in any of my coolers, no matter how I try to make it work - I tried flat, upright and at an angle. We have several coolers including a 95 qt cooler, but I just can't make it fit. Will it ruin or dry out the cake if I cut the bottom layer in half, then wrap and freeze them? This way they will be able to fit in a cooler. I need to bake ahead of time, but I don't want to ruin my sister's cake and make it a dried out mess. Otherwise I guess I will have to talk my sister into a smaller bottom layer and extra tier (or two)...yikes! TIA!

i think it would be ok to cut it in half! as long as you wrap each half well you shouldn't have any trouble with it drying out icon_biggrin.gif

If you do, I would be sure to stack them like lego blocks when you assemble the cake....say one layer of cake has the cut east/west and the other layer has the cut part north/south, so that you don't have a weak spot in the center of the cake.

If you are worried about it drying out make some simple syrup and brush it onto the layers of the 14in before you decorate. It's the only thing I can think of aside from wrapping it tightly in plastic wrap.
If it does dry out than the simple syrup should help (equal parts sugar and water brought to a boil and cooled, leave as is or add flavoring). I hope everything works out with your cake. Your sister is very lucky to have you do this for her special day. It's nice to see sisters that way. Have a safe trip!
