Okay this might sound silly, but what is the difference between buttercream and italian meringue buttercream? Is it easier to work with? Does it look different on the cake? Just wondering.

Depending on which recipe you choose, American buttercreams can crust.

None of the meringue based buttercreams will ever crust.

Which is easier to work with, is a matter of personal preference. icon_smile.gif
