Hi everyone,
I need your help and expertise in getting a foolproof recipe for:
Vanilla cupcakes
Chocolate cupcakes
Red velvet cupcakes
I have tried and liked the WASC recipe but I need recipes from scratch since currently I am not near grocery stores that sell cake mixes.
I tried a few from-scratch recipes but they were dry. I need them to be moist and soft. Also, can you make cupcakes moist by brushing simple syrup on them or would they get soggy and fall apart? I have tried simple syrup on cakes and it turns out well every time.
Also, how can you alter the ratio of vanilla cupcakes to make them in different flavors like strawberry, lemon etc? Can that be done?
Really appreciate your help. Thanks!
Martha Stewarts red velvet cupcakes come out very good. I am not sure if I can post her recipe or not but if you have access to a library they might have her book on cupcakes. Her devils chocolate cupcakes are good too. Hope that helps.
Here are the ones I use:

My only advice is to not fill the liners too much because this cupcake recipe really rises.
