I decided to try and make a mango cake because it just sounded yummy. I looked for some recipes but they were all pound type cakes and I wanted a layer cake.

So, I used my regular yellow cake recipe, replaced 1/2 the sour cream with fresh mango puree. Then I put some of the puree between the layers (3 layers of frosting/filling) AND mixed some of the puree into the buttercream for the filling.

This cake tasted NOTHING like mango. It didn't taste bad and was very moist. But it didn't have any real discernible flavor. It didn't taste like vanilla, just a sort of slightly fruity flavor.

I'd love to try it again. Any suggestions on how to boost the flavor?

Replace any extract called for in the recipe with mango extract. (If that's not enough, add more!)

Well it never occurred to me that there was a mango extract! That seems like such a "duh" now that I think about it.

Thank you icon_smile.gif
