Caramel - No Heavy Cream At Home

Hello everyone,
I am in the middle of a recipe and just found out the heavy cream that was in my fridge 2 days ago is no longer there.
I do have skim milk and lots of butter. I've heard that I can use those two ingredients and make a substitute for heavy cream in the recipe.
Here's what the original recipe says to use:
Caramel Topping:
1/4 cup light brown sugar
1/2 cup sugar
3/4 cup light corn syrup
2 tsp. sea salt
1/4 cup heavy cream
1 1/2 tsp. pure vanilla extract
1/2 tsp. orange extract
Any suggestions for a substitution?

But, really it's whole or full fat milk they're talking about. The first link indicates an addition if you have low fat milk. Skim is pretty low fat though. icon_wink.gif

I've never tried this either.
