What Are Some Good Cake Pans?

I currently have Wiltons 9 in, round cake pans and I have noticed that my cakes are not turning out right? are Daddios pans good? you know it probably isn't my pans maybe its the temperature in the oven, b/c my cakes are sometimes hard around the edges..........

need advice.......

hello! i love my magic line pans, i have them in 6"/8"10"/12" round, as well as 6"/8"/10" squares icon_biggrin.gif you'll find the general consensus here is that magic line is best for traditional shapes and fat daddios is good for the shapes magic line doesn't make.

as far as oven temp goes, i usually bake my cakes at 325F- low and slow as some say lol! it'll help with the hard edges icon_biggrin.gif hth!

I'm a Fat Daddio's gal all the way. I love them! They cook evenly and you can wash them in the dishwasher. I have a square Magic Line and have trouble keeping the corners from tearing off. But either FD or ML are good pans. Their sides are straight unlike Wilton pans.

If you are having issues with uneven cooking, I highly recommend getting an oven thermometer and testing your oven. I once had an oven that registered 375 when I wanted 350. Once I knew that, problem solved. Also, you might try using baking strips. You can buy them, but many people just cut strips of towels, soak them in water, squeeze out the excess and wrap around the base of your cake. I have not tried it myself, but others swear by it!

You probably have the Wilton pans with the sloped sides. Wilton markets different lines of pans. The Decorator Preferred line is very good but they seem to be phasing out that line. A supply store owner once told me they are manufactured like Magic Line. I like Magic Line's square pans because they have sharp angles but I have to clean them with a brush. You'll probably want to buy at least two of each of the smaller size pans so get the same brand (and the same line if buying Wilton) for the same size.

I use Magic Line pans. I think they work great.

My favorite is magic line as well. Nice square corners on the square and retangle shaped ones. I also have the round ones too. I have some fat daddios and wilton but IMO spending the money on the magic line is the best investment.

I have Wilton pans and I just got a few Magic Line... I will be replacing my set of Wilton with Magic Line... I just baked two rounds- a 10" in a Wilton and a 10" in a Magic Line because I didn't have 2 of either brand... there is a noticeable difference in how they baked up. The Magic Line rose higher and more evenly, almost no leveling will be needed. The outside also stayed nice and light. The Wilton got a darker "crust" on the outside, didn't rise as high (I measured the batter so both pans had the same amount), and domed in the middle... The Magic Line is also a smidge wider, so I will have to trim it a bit to line up with the Wilton... and the corners are sharper on the Magic Line.

Hope that helps! The side by side comparison was an eye-opener for me!

Magic line, ESPECIALLY for cornered cakes. I purchased a couple of Fat Daddio's cake pans (10" square & 9x13) and ended up selling them on eBay just after looking at how the corners were constructed. Purchased Magic Line (awesome sharp corners) and will now only purchase from them. Always comes down to personal preference and this is definitely mine. thumbs_up.gif

Magic Line is the "gold standard" in cake pans. They're the envy of the other cake pans.

I can't live without them. I'm afraid to bake with any others...lol. Maybe I'm not a good baker after all. Maybe it's the pans.

I do have one or two Fat Daddio's. I do a lot of recipe testing on 6" pans and I wish they had them on that size. Maybe later on they will.

I mainly use fat daddios but have a few magic lines, the fat daddio pan corners look rounded but when I bake them the corners are nice and straight. I prefer fat daddio 3" deep pans for my cakes icon_smile.gif
