Have a request for a 3 tier topsy turvy cake made with buttercream. Not sure of the sizes yet. Decorations are fondant lollipops and flowers on sticks with a number on top. My question is what do people charge for such a cake?? Thanks in advance!

I charge $1 more perslice for topys than regular. If questioned, I reason that is due to the cake that is wasted when carving, and the complexity of the structure ...(and the anxiety of working on it hoping you don't screw up! lol).

You should charge your cost (consisting of the ingredient cost + labor cost + overhead cost on a per-order basis) plus a 20-30% profit margin.

I don't really waste much cake when carving because the angled slice from the top gets flipped over and added back onto the top...the only waste is the stuff I carve around the base to make each tier angle in, a bit.

I have a fairly high starting price for topsy turvies because it takes quite a bit of extra work to carve and stack and support them as compared to a regular tiered cake. Charge $1-$2/serving more than you'd charge for a regular stacked fondant cake.
