Hi guys! I am in a bit of a panic right now. I'm set to do a 4 tier wedding cake next month out of state. Yes I agreed to do a friends wedding also in which both my husband and my son are in! Anyway, we won't be able to be there until a few days before the wedding, so I was hoping I could bake the cakes here and freeze. My question, how do I keep the cakes frozen on a 9 hr drive? I'm thinking maybe dry ice? I've never used the stuff before so I was hoping someone could chime in... help! I hope I make sense as I am a bit scattered at the moment! Thanks icon_confused.gif

I would double wrap them in plastic wrap, heavy duty aluminum foil, then place in ziploc bags. Put them in a cooler on top of ice. The ice may begin to melt, but the cakes should still be frozen. You could even check on the cake/ice when you stop for gas.

I did exactly what MrsMoe07 suggested last August on an 8-hour drive to Florida. The cakes were still frozen when we arrived at our rented condo - I threw them into the freezer until ready to use. We did not have to add ice, but it was one of those huge 7-day coolers loaded with ice from an ice house, which seems to melt more slowly than "grocery store ice" LOL.
