I dont know how many of you guys watch Dc Cupcakes, but on their show their cupcakes batter is very thick, do they just add more flour, does anyone else make cupcakes like this? I would like to try any ideas?

Their recipes are from scratch. And the process they use to make a scratch recipe will result in a thick batter. You can get a thin batter using a scratch recipe, but that is a different method of mixing than what they use. You can also get a thinner batter from a scratch recipe that uses a lot of liquid too. But form the most part a scratch recipe batter is thicker than a box mix, or doctored cake mix batter.

If I don't get a thick batter when I test a recipe using the process they use, I know right away I have done something wrong.

I've used their chocolate cupcake recipe before...It's super thick and IMO isn't the best chocolate cake recipe.

The recipe I use for vanilla cake (buddly valastro's) is really thin and it's a scratch recipe. It's awesome.

Paperfishies, is that the custard one? It is a great recipe. And he uses the dump method.

Yup, that's the one!!! I love it with and without the custard in it. The custard version is really great if you want to do different flavored pound cakes...Without the custard it's really light and airy almost like a boxed cake mix but with a homemade taste.

I haven't tried it without the custard. I love heavy, moist cakes. This recipe makes great cupcakes too. Next time I make it, I'll split the batter and try both ways. Thanks!

http://ashleelittle.wordpress.com/ Go to this site and scroll down to "Italian custard cream" there is his recipe for the custard cream and then the recipe for the vanilla cake....You can use the custard cream in the came if you want a dense moist cake...or without it and you will have a light moist cake.

If you use the custard, make sure you mix it until it is very thick.
