Hello. Last year, I was making alot of box cupcakes and decided to go bigger by starting to bake from scratch. I LOVE it!!! I am having a hard time finding recipes I like. I am looking for some good solid, more dense cupcakes. Like something you find in the cupcake bakeries. Not too dense like a brick though! Mine just seem to be coming out to light. Someday in the future if this works out, my mom and I would love to start selling ours. Everyone who has been eating our cupcakes loves them, so hopefully we can start a small business!!!
I don't really have any schooling so I don't know what to do. I am taking a cake decorating class next month to help. But I need some help with my battters. I would love any info you could all give me. Thanks!

If you want a dense cupcake like you find in the large bakeries, go back to box and make a doctored mix. Those are the ones that are dense.
