This one was done all in buttercream with sugarpaste decor. It was a lot of fun making the buttercream look old.

A smooth buttercream surface with nice clean, crisp edges and corners is so challenging and rewarding to accomplish and just ... breathtaking to me. I HOPE to get good at that one day...

I agree! At first I loved fondant, now I hate it. I prefer to do bc all the way with fondant accents only. I love the challenge of buttercream! And the look and taste too!

@sweetmonkeycheese. Wait, need to clarify, the skulls and eyes are actually sugarpaste blended into the buttercream at the edges to make them look like they were pushing out of the cake from inside. I wish I was that good at buttercream!

I also would love a forum of all bc cakes. When I first found CC I was all about the fondant and covered my son't birthday cake with it because I thought it would be a nice canvas to work with. My family doesn't care much for the taste or texture of the fondant on a cake and I have begun to experiment with the bc, but find that it really is a skill to get that smooth look and crisp edge. I guess practice is what it takes. What method do people prefer to use in order to get a smooth finish to their bc???? I have read about the viva method, melvira's method, etc., but haven't tried them yet.

I ordered the DVD "Perfecting the Art of Buttercream" by Sharon Zambito. It was the best smoothing process I have seen yet. I have only tried it once but I could really see the difference from my previous attempts.

All of my cakes are iced only in BC, I will not cover any in fondant at all and my customers appreciate that...it's a WY thing, I think-nobody wants the layers of fondant to cut through. I use a lot of MMF decorations now a days, but spent the first 16 years of my decorating experience doing exclusively BC only cakes- just this last 6 months or so i've added some fondant- it's okay if used in moderation and i think it does take a lot of talent to use fondant or at least a lot of patience and equipment anyways! I think I've spent more $$$ in the last few months on cutters, tools, etc...etc...for fondant decorations than I've ever spent on stuff for buttercream work (which really has amounted to decorating tips, bags, flower nails and couplers..... I'm really hoping exclusively BC iced and decorated cakes make a come-back- that's where I'm most comfortable!

Very simple, yet so eye catching. To be honest I'm not that big a fan of the buttercream look, but that's a really effective use of it!
