Lowfat Tier Cake

Soooo.... I'm making a cake for my friend's mother's 60th birthday. She has recently lost a bunch of weight and so have a majority of her friends. They want a lower fat cake (will have to be vanilla, cuz they want snickerdoodle flavor). Icing will be cream cheese with lowfat cream cheese (I'm good there). Now, it is a 2 tier cake, 8"and 6". I was going to use the diet sprite cake recipe (cake mix, can of diet sprite) but am not sure how that will hold up to stacking. I use straws as supports, FYI. Any help/recipes/suggestions would be appreciated!!

What about the sponge cake recipe used in swiss rolls? It has next to no fat but it has quite a bit of sugar, I have never tried making it with a sugar subistitute... Sorry that may be of no help but at least it will bump your post and hopefully someone else will be of more help.
