Torting A Sheet Cake ~ Help!!!

For some reason, I am having problems with sheet cakes. When I torte one and fill it, I can never get the layers back on straight. I end up with a leaning cake! I try to take my time, get things lined up, etc., but it always comes out uneven ~ even if it's even on one side! Any ideas on how I can rectify this problem???

Do you have an Agbay? If not...get one! Do you level the top before you do anything?
Is your filling smooth....meaning even all the across the cake?
I use a square cake bake board or cookie sheet to slide the top cake off and on, then smoosh the cake down a little, wrap with saran and let it settle. HTH.

Gee, this was something I had to really work at! icon_lol.gif

How do you cut your cake? Using a cake leveler (NOT a Wilton one tapedshut.gif ) to make straight, level cuts will get you the best results.

Once cut, I slide in a sheet cake board and gently remove the top layer. I leave about an inch overhanging the edge of the board.

I dam and fill the bottom, keeping the cake in the same position as when I removed the top!

Now I position the top layer that is on the board above the filled bottom layer- line up the corners of the overhanging cake of the top layer (on the board) with the bottom layer. Now I gently slide the rest of the top layer off onto the bottom layer. Sometimes I smudge some filling onto the bottom of the board. oops! Most of the time the layers are lined up ok. If not, I can usually gently lift and slide them into the correct position.

Once the cake layers are put together, I lay the cake board on top and press down to kind of even out any unlevel areas.

be sure to mark the top and bottom with a swipe of frosting to be sure you line them back up correctly.
