Coffee Cake Help!

Hello,

I want to make the cherry coffee cake I usually make as a cake in a few weeks... it's for a birthday and the icing on it is icing sugar, water and vanilla - drizzled over the warm cake..
Would I be able to cover it in fondant? If not...

My other thought - i've never done this.. is to make my cherry coffee cake - (cherries in the cake) with a filling of buttercream and cherries inbetween the layers and vanilla buttercream on the cake.. covered in fondant.
How do you think that will taste?

If I used canned filling cherries - does it have to be put in the fridge after I drop it off, it won't be served for about 5 hours later?

I'm drooling already, Dee! Especially with the cherries in the buttercream filling. I don't think it would need refrigeration if it's being served the same day.
