I charged $75 for these cupcakes. I helped her to the car with them and after she got in the car she said "oh I almost forgot to pay you" and then she handed me the money folded up and drove off. After she drove off I counted the money and she had only given me $60!! I didn't think I charged too much and she acted like she loved them...I'm not sure what the problem was. Do you guys think I charged too much? They took me a long time to do. I was pretty shocked..I've never had that happen before.

I'll try to re-post the picture
Still didn't work...one more try..if it doesn't work the cupcakes that I'm referring to are in my photos they are the one on the stand with the baby on top. Image

That's so bad! What a complete b***h! I would've definitely rung her and asked for the rest! What a cheek!

Since this one was for my daughter, I didn't charge her..lol (i don't give her enough allowance for that! ha!) but if it was for someone else, I would have charged $63...it's 3 layers of each 8" sq and 6" round...25 servings.

I've just put my cupcake prices up, I would charge £20 for these. Do you think thats unreasonable? All accents are hand made by me.

This is a great thread. I think some people are undercharging, but a couple of the cakes/prices I have seen, I was like 'no way would I pay that much for that cake'. Charging $4 or $5 (or whatever the norm is) a slice is not a 'right' - you have to back it up with professional quality work. Just because you spent an obscene amount of hours making a cake does not automatically mean it is worth a fortune.

This is a 6" cake I am selling today. I asked her for 40.00 I think I gave it to cheap considering I did a gumpaste bow on top. This is my strawberry swirl cake with choco Ganche filling iced in buttercream and choco fondant details.

You know when I tell people my cupcakes are 2.00 each to start and depending on how much embelishment they want on them, they look at me like I'm an alien. But there is a lady selling them in my area out of a lunch truck at 3.00 a pop. I don't get it?

I very seldom sell my cakes. Most of them are done for gifts just because I enjoy the hobby. I have 1 friend I have made 3 cakes for the most recent I made last week was for a baby shower. I quoted her $77 for a 9" round. When I actually baked the cake I was afraid a 9" might not have enough servings so I baked a 10" instead and gave it to her for the same price. She said they had plenty of cake left over, so I won't do that again. When will I ever learn not to cheat myself?

So how do you really judge what your cake is worth? Not what your time is worth (or so you wish) + materials, but the actual product you've created. Two identical cakes at the same price, and one I may be willing to pay more because it just looks so nice compared to the other, or vice versa. The better looking one, I may feel was a fair price and the less than par one, I may feel ripped off.
Although my hubby thinks my skill level is good, I wonder that maybe I am just average with other decorators. So what is average worth?
My hubby and I were discussing that tonight, and he said just keep raising my prices until sells slump, then back down a little. But I don't want to raise my prices, people realize, quit calling, I lower my prices, people don't realize, and now no calls.
I don't feel my prices are outlandish, but maybe compared to my skills they are. I start at a rate of $1.85 ($2.25 if tiered) per serving for butter cream and $2.50 for fondant. BUT by the time you multiply that by 60 or so(plus any addtional decorating fee), people aren't interested.
Maybe I am just marketing to the wrong people. icon_smile.gif

When I first started, my prices were really low and I was practically willing to sell my cakes for whatever I could get. As my work got better and I started doing the math, I realized my prices were too low. My theory now is that I have to take time away from my daughter whom I ABSOLUTELY love and would love to spend every minute of every day with, to do these cakes. So if I'm not making a good profit, it's just not worth the time. When I think about time away from my daughter, I no longer go out of my way to give people extra servings, or extra decorations that they don't want to pay for.

BTW $195 for this one.

http://cakecentral.com/gallery/1952231 This was my first fondant cake. I made it for a friend. Mochaccino chocolate chip with chocolate butter cream under the MMF - yes, my first attempt was with making my own because I was too cheap to pay $7 for Wiltons! LOL - and I've heard it doesn't taste as good as homemade icon_wink.gif Bottom layer is 8" square; top is 6" round. Fed about 12. Was done as a gift....but at my current price structure, I would charge $35. Took about 5 hours...yeah, way underpriced...I think all of my stuff is! :/

http://cakecentral.com/gallery/1952233/1952234 This was made for a friend and was not charged either. 9" bottom, 6" top (?) not positive...oops...lol Probably 12 servings here, too...so another $35 one. Probably 5 hours in this one as well!

http://cakecentral.com/gallery/1933629 This one was $45 and I WILL NEVER do another 3D cake for for that price again! Should have been $55 at least! Again...for a friend...so it's okay....total time....8 or 9 hours, I guess.

http://cakecentral.com/gallery/1949303 This one my hubby asked me to do for someone leaving his team. 10", 8", and 6" tiers. Done for free at hubby's request...would have charged $100 to someone else...but I might have spelled Tschuss right! lol - My German friend pointed that out...I looked it up; I swear! LOL

http://cakecentral.com/gallery/1952150 This one was small....8" square....9 or 10 servings - only 8 was requested. Charged $25. Decorating time was about an hour and a half.

no offense shaekae81, but your serving amounts are wayyyyy off! a 6"/9" to feed 12? a 6" cake by itself feeds 12! i'm giving you the link to wilton's baking guides so you can get a better idea of what a cake should serve so you can price accordingly icon_biggrin.gif the serving sizes on the link are "industry standard" so once you start charging per serving be sure to reference this chart so you don't get undercharged. the website also has cutting guides to show you how to properly cut a cake to get the proper servings. hope that helps!

No offense taken.....I appriciate the feedback icon_smile.gif I did have serving size issues in the beginning...then I found the charts (both Wilton and Earlene's) and thought they were wayyy off....but that was before i realized it was refering to a 4" layers of those pan sizes....a lot of my cakes are only 2" I do have it straight now icon_smile.gif But thanks for the consern!

If you want a photo to show up in your post, here's how:

First upload the photo into an online photo site like Photobucket (getting a photobucket account is easy and FREE) then just copy the photo's image code (IMG Code) from photobucket and paste it into your post. Then when you hit 'submit comment' the photo will display in the thread. Easy.

Photobucket is here: http://photobucket.com/

I'm pretty sure you can also use Flickr like this too - just look for the image code (IMG code) and copy and paste it.

As for the cake price.....if it was me, at my current price structure (after working out the serving size issues I had..lol) I would charge $83 for that one. hth

This is one of my favorite cakes I have made. It was a gift, but if I was charging someone for it I would have charged around $100 to $125 due to all the fondant work. It was iced in buttercream WASC with Strawberry BC filling, 9" round. http://cakecentral.com/gallery/1451533

This one was also a gift. It was approx 130 servings. Each tier was a different flavor with different fillings. Iced in butter cream. Had I charged, it would have been around $650 again due to custom fondant figures.
http://cakecentral.com/gallery/1691999

I have made an excel spreadsheet for myself with the cost of my ingredients to help me figure what I am actually spending to make my cakes. The hard part is knowing what my figures are worth. The cost of the materials is not that much for figures, but many of them take me hours to make. If I really wanted to sell them, I'm not sure people would want to pay what they're worth.

I did this teapot cake and the calla lily cupcakes for my mom's 60th birthday tea party. Obviously I didn't charge her, lol. But if I was doing this for a customer, I would have probably charged between $50-60 KYD ($60-$70 USD) for the cake and between $2-$2.50 KYD ($2.38-$$3 USD) for each cupcake. The flavour of the cake was guava with vanilla buttercream filling and the cupcakes were guava with cream cheese icing, I also did some almond cupcakes with almond icing but didn't get a chance to take a picture of those.

A very interesting thread. All your cakes are beautiful. Most people don't realize the time that goes into making these edible works of art and that's why they balk when you tell them the price. I'm a hobby baker and have only made cakes for friends and family. What would you guys charge for this cake? It's a 12inch 3 inch chocolate chiffon with whipped cream filling and frosting and covered with fondant and fondant accents. The libra picture in the center is all hand drawn. Btw, I'm in san jose if that makes a diff..

Just out of curiosity since my cakes are mostly for family. I made the sea turtle (in my photos) for my granddaughter. A friend of my son's saw it and would love one for his son's birthday. This one was made using the Wilton 3D Easter egg pan 1/2 for the rock and 1/2 for the turtle body. Is anyone willing to give me an idea what I should charge should he actually call and want me to make one.
Thanks, Grams

This thread is awesome! I have been struggling with pricing my cakes and even have had some people try to negotiate... I am still new to this and learning but each cake just like all of of yours are a labor of love...most don't understand what goes into these cakes....recently had someone ask for a discount because she is a coworker and "planned" on ordering anotherncake from me next month. I gave her the discount she loved the design and then found something to complain about after paying ...aye..probably won't be making any more cakes for her and definitely sticking to my price guns...
