I'm looking for a rich chocolate frosting for cupcakes. Something that Shines soft and will pipe well.

I'm right there with youicon_smile.gif I think chocolate buttercresm stinks. I have tried this one:

12ounces choc chips
14 ounce sweetened condensed milk

Melt choc chips in double boiler
Add condensed milk
Cook for 2 minutes stirring constantly
Stir until frosting is shiny and spreadable consistency
It's tasty and is basically a fudge. It was not as shiny as I would like. Many people use ganache ( equal parts chocolate and heavy cream) and let it set or whip it for piping. That's my next experiment. Oh and 1 woman put 1 tablespoon of corn syrup in her ganache. I think that might add to the shine. I hope you find a good solution and share it with usicon_smile.gif

Chocolate swiss meringue buttercream, or chocolate italian meringue buttercream. Delicious!!

Thx so much! I've tried the chocolate ganache, I'll try adding corn syrup to see if it stays soft.

I'll def try the condensed milk instead of heavy cream. I also want to give the chocolate Imbc a try.

If I find something better I'll post it!
