Hi!

Since Valentines Day is coming up soon, I have started trying to expand my cake decorating business and incorporate sugar cookies and cookie bouquets. The pretty, 3 and 4 inch ones in a nice Valentines holder...

here's my question...but I know in advance there are different areas that we all live in and the market rates might be different but I just wanted to kind of see what everyone else was doing..

1.) How much do you charge for a standard cookie bouquet? Do you price per cookie or per bouquet? I am thinking making both 6 bouquet cookies and 12 bouquet cookies but can't seem to figure a fair rate for them. It costs me about 50cents to make a cookie and put it in a bag but I don't want to go broke with so much time put in and little profit.

2.) How do you assure that your cookies "stay" on their stick and don't come off? Do you royal ice the back for glue?

I price my arrangements by the cookie + $7 or 20% (whichever is higher). Since I have to purchase my basket, foam, filler material and bag/ribbon, I figure I am just covering my added costs.

As for the sticks, I use bamboo skewers and insert them when the cookies are right out of the oven. I have a sticker that I affix to the back of the bag where my ingredients are that warns that the cookie should be removed from the stick before enjoying.
