Questions On Keeping Chocolate

I was wondering how long chocolate can be kept. I was thinking maybe 6 months if it is stored where it is cool, but not sure. Can it be frozen? I have some that is 55% dark chocolate but not sure how to store it.

A cool dark place is always adviseable. I have kept tempered chocolate for a year or more with no problems, but then I essentially have a root cellar for a basement so cool and dark isn't an issue. icon_smile.gif One it blooms (the white powdery stuff) I toss it.

I think it should be fine to freeze if properly sealed. It may matter as to whether it is tempered or not.

Hopefully someone else will chime in who has a bit more knowledge.
