I have a bridal show tomorrow and I assume I will be asked if I bake from scratch. While I do bake several cakes from scratch, I also bake several using doctored cake mixes (which are more popular BTW). Does anyone have a good, snappy response to give to anyone who asks the "Are all your cakes made from scratch?" I know some folks look down on "mix" baking.

i would simply say.. some cakes are from scratch some are doctored mixes it all depends on what the customer likes best after tasting.

agree. I also do both, it depends on the flavor. So in the end it depends on what they like and what they order for their cake.

I wouldn't tell them about the mixes. I made that mistake to one person who actually tried my scratch (moist and yummy...great!) chocolate and my box chocolate (doctored and yes its good) side by side and chose the box!!!! So when they asked me about it later, I was honest and told them...and I never heard from them again.

I learned my lesson...yep people love a good doctored box mix...but you don't have to tell them what it is!!! Just say "All my cakes are completely homemade fresh with the best ingredients" or something like that. Which is absolutely true!

I simply tell my people, "Some are scratch and some are extended recipes."

It depends what flavors and design they want depends on which category the cake falls under. icon_biggrin.gif

Well alot of them had "mom" or "gramma" who ALWAYS "baked from scratch and ONLY from scratch, and REFUSED to use a box mix" and so now they are box mix haters...even though they'll taste yours, smack their lips, and declare it totally from scratch.

haha.

I actually had someone say that..they declared themselves a total cake connossieur (sp?) and they knew a cheap box mix from scratch cake...and then they proceeded to taste my doctored box and declare it delicious. haha.

I say, "I can do all three." Then they are confused. lol I have to explain, "Box, altered box, scratch."

It shows my versatility. After my response, I haven't had anyone ask which ones are which.

I also tell them I do both, scratch and doctored mixes. A few have asked me which is this one, I honestly say, Do you like it? They say YES! I say, then does it matter? I never get a response after that. Usually a positive snicker. But that's it.
