I've searched and maybe I am calling it the wrong thing but I get how to do the actual castle but making the hilly affect going up to it I am stumped.

You can then apply the carving techniques for the spiral and use a more cone shaped cake (wilton wonder mold or just carve it yourself from some rounds). HTH.
