I have a friend whose little girl is allergic to milk. She has asked me to make her a cake using no milk but I've never done it before. I would like to have a really good recipe for cake and frosting for her. Please help. icon_sad.gif

No butter might be harder- but the chocolate cake in The Cake Bible is fantastic and uses water instead of milk.

Any vegan recipe will work fine. They are actually quite good. I made up one once and no one knew the difference. My son just didn't tell them.

It was a chocolate cupcake recipe made with coconut milk. I don't have it available, but if you google vegan chocolate cupcake with coconut milk, one should come up.

I made a vegan cake for a friends daughter who is allergic to what seems like everything. She brought me two boxes of mix from the store though. One box was seriously almost 5 times more expensive than a regular box of mix...and I needed to go buy a third because it makes less too! It actually was so gross I felt bad about giving it to her. I told her that and she said that she knows it's gross, but it's all her daughter knows so it's what cake tastes like to her. My son (and pretty much all of the other kids at the party licked the icing off the top and tossed the cake after one bite.

Or I made a swiss roll cake for an office party today but made it a regular cake by not rolling it and layering two cakes on top of each other (or obviously baking it in a different tin makes a regular cake which is one I grew up with. It was only since i moved and got a lactose intollerent friend that I thought about it and realised it was also dairy free!) This site has the recipe/method if you are not familar with it.

Here is my new favorite buttercream...and yes it has no liquid and is just fabulous!!! Hope it works for you...

1 stick unsalted butter at room temp
1 cup Crisco
1/2 tsp each butter flavor, vanilla flavor and almond extract
1/2 bag of premium powder sugar
1/2 tsp meringue powder (i didn't use)

Cream butter and crisco until smooth, add flavorings, add powdered sugar one cup at a time.

I was hesitant when I saw there was no liquid but instantly fell in love with this recipe. It took me about 6 months to finally find my perfect buttercream recipe and this it.

I'm not sure about the cake, sounds like you have some good advice there. I always use water in my buttercream not milk and it's SO fantastic. That shouldn't be an issue to avoid milk with buttercream.

I might be a bit late on this one, but we cant eat dairy in our family either.

I use almond milk/coconut milk to replace the milk in recipes cup for cup, if buttermilk is called for then i do the same method to make regular milk into buttermilk(adding vinegar or lemon juice to the milk) only i use almond milk. it works awesome! it also comes in vanilla and chocolate, yum!
for butter i use coconut oil cup for cup also, you can get a couple varieties, some still have the coconut taste and some dont, i use either one depending on the flavor of my cake/baking. Hope that helps, living without dairy is kinda tough unless you get creative lol icon_smile.gif

i forgot to add, using coconut oil really makes things fluffy and moist as well,
I also use almond milk in my icings/buttercream too, couldnt imagine it any other way, tastes really good.
