This was a red velvet cake I had to make for an order today. To be honest.. I got and am still a little nervous.. for me.. I don't like red velvet. I guess I just don't like the red food coloring taste it has.. but other then that it's okay, LOVE cream cheese buttercream.. I mean how can you go wrong with that? or toasted pecans.. but the cake itself.. I'm just nervous since this is for a friend. Because I think sometimes people order thinking NICE RED CAKE.. type of thing.. then not really know what it tastes like. I guess I just don't have a taste bud for the sweet and kinda tangy cake(not sure how else to describe the taste).. I'm hope the friend that ordered it enjoys!!

I have never had a red velvet cake before, so I'm no help there, but it certainly LOOKS good. I too love cream cheese icing.

I think when it come to red velvet you either love it or hate it. I personally love it if it's a good scratch recipe.

yup I do scratch..and cakemanraven recipe..so I think as good as it gets? I dunno.. but like you said.. I think you either love or hate

I've never met anyone, aside from myself, that didn't love red velvet. It's one of my most popular flavors. You'll do great!

::raises hand:: I despise red velvet to the point that I will not make it. You can not pay me enough $ to make that. I rank RV right along side Wilton Fondant as a totally disgusting "food".

i hate making it too! i took it off my flavors list. if someone asks for it, i explain that i would prefer to make them a cake that doesn't include an entire bottle of food coloring as an ingredient. i've even researched recipes that include beets to add the color...instead of the food coloring. but then i realized, i don't HAVE to include it as a flavor! and if i lose the sale, oh well! but guess what, i haven't lost a sale yet b/c i don't offer the flavor and someone asked for it icon_smile.gif

just remember OP...make what you want to make...it's up to you icon_smile.gif and the cream cheese frosting is delicious on chocolate cake...it's like a cheesecake that's baked in the chocolate crust...yum!

And thanks upat2am.. I could not agree more. I guess the only reason I added was all the other shops in the area do sell it.. so figure I would as well. but really it being a cake I do not like.. I might just take off menu.

I made it once and I was so grossed out by the bottle of red food coloring that I won't make it any more - ick!

It definitely requires the right recipe to work. I use Cakeman Raven's recipe, which I think is out of this world. However, if I eat just the cake itself, it's just ok, but when I add that cream cheese frosting, it's a whole new world and is just so delicious. So I'm guessing that with your cream cheese and Pecan (a personal yuck to me, but I just don't care for nuts), I think they will really love it. Don't be nervous icon_biggrin.gif

Red Velvet is a favorite around here-though I've always figured that was because of the cream cheese frosting and not the actual cake. Usually customers can't even place the flavor.

Cakeman Raven uses 1 oz. of red food coloring.

I hate RV, not necessarily for the unremarkable flavor, but because I have RED smears on me, my clothes, the walls, he floor....everything a single crumb of it ever touched- drives me nuts! I had a RV wedding, followed by a baby shower with rv cake balls the following weekend....I never wanted to see it again. I even had a red smear on my glasses.

I know people love it, and I've tried several different recipes, but I still don't 'get' the appeal.

Red velvet is not commonly known here in Australia. The idea of all that food colouring grosses me out. It's funny, I don't mind coloured frosting (to a point), but dumping a heap of colouring in the actual cake turns me off and seems really unnecessary to me. I admit to never having eaten it though, perhaps if I tried it I might be a convert...but then the same cake without all the colouring would taste the same wouldn't it?

I don't think I've ever encountered any type of cake with such a variation of recipes and tastes as RV.

I guess it might also depend on the location. In the east coast, where I live, almost EVERYONE I know loves Red Velvet cake. It's very popular and it's the #1 requested flavor. Personally, I enjoy it when it's made from scratch. I think of it as very classic and elegant, IMHO What really makes the deep red coloring is adding the cocoa to the mix. Which, you can taste the hint of chocolate. The red food coloring just adds the deep red coloring. It really depends on your taste some people choose not to put too much red food coloring.

I had never tryed it before so I figured I would have to make it. It was from scratch as well. The day I made it, the taste was nothing special. I wasn't sure what all the rave was about and it definately needed the cream cheese icing. However, the next day after sitting in the fridge overnight it was AMAZING with the cream cheese icing. I kept cutting pieces all day hehe. I plan to make another one over the holidays because I have been craving it. I would say the combination of cream cheese icing and cake is what gets people. But I would have to agree that the cake itself is an odd flavour.

I hate RV cake, and I don't not make them. I just don't understand the necessity to screw up a perfectly good cake by dumping a ton of red food coloring in it. This ranks right up there with putting yellow food coloring in your homemade noodles or chicken soup. It just grosses me out. If I see either one at a pot-luck, I won't eat them. Sorry if this offends anyone that does it, but I figure we get enough secret ingredients in the boxes we purchase from the grocery store. I much prefer anything homemade to the stuff that comes in a box. But I digress...no red velvet cake in my house, but your cake looks lovely. Oh...and to add...I just look pecans...YUM! I'm sure she will love it.

technically a true red velvet cake has cocoa in it. that's why one would get the hint of chocolate cake.

do you just make the WASC and tint it red? if so, that's not a red velvet cake. although it probably tastes better icon_smile.gif !!!

SOO I am tempted to write her and asks how they enjoyed.. but I don't do that being it was business. I do see her tomorrow for a playdate.. so I might bring up then.
And I did prebake cake, so it sat in fridge overnight before frosting.. hope this make it extra good icon_smile.gif

Cake Man raven uses 1 oz red food coloring, is that the gel colors you get from the craft store, or the watered down food colors you can buy in the baking section at walmart? Just wondering, used gel food colors the other day on my first RV, didnt dissolve or mix all the way in, kinda zebra looking with the different shades of red!

i can't stand red velvet cake. baking (wow at the dye), definitely not for carving, and found out i'm allergic to red food coloring. so...i dont make it at all. if they want it that bad, they can go buy one at walmart bakery. lol. and most call me weird but i dont like the flavor of cream cheese frosting. icon_twisted.gif

The cake mix I start with is Red Velvet. So yes, it technically is a Red Velvet cake.

I know there is a hint of chocolate cocoa in the cake, but when made from scratch there is a lot a cocoa and that is where the mostly chocolate taste comes from.

On this site WASC is the universal term for any flavor made using those directions and quantities of ingredients. Doesn't mean the cake is Almond flavored.

Cakeman Raven's recipe only has 1 tsp. cocoa in it. Have you tried his recipe? YUM
