Red Velvet Cake + Fondant Help Please!!

Hello all, I thought I'd ask the experts and see if there are any tips you guys can give me when it comes to Red velvet cake and fondant. Basically I'm making a red velvet cake with creamcheese frosting and will then appy fondant. I want to apply dragees to the fondant, and a fondant bow. Should I apply the dragees with royal icing or will gum glue be okay? Same for the fondant bow? I know that creamcheese needs to be refriderated so I'll have to put the fondant cake into the fridge so I'm wondering if this will be a problem?? Will my dragee decorations fall off the cake or run/melt from the moisture when the cake is brought to room temperature? I dont' have any experiece with refridgerated icing and fondant together, please helpicon_smile.gif

It depends on what recipe you are using for your cream cheese icing. There is actually on on this site that actually doesn't have to be kept cold.. it has enough powdered sugar to stablize it. Plus it smooths really nice and tastes great. That would take one issue away from your stress!!!

If you do end up putting in the fridg.. make sure it isn't super cold ..... Too cold will cause the fondant to sweat. I might check with the manufacturer to see what they say about it. I know that some work fine and others do not.

As far as the dragees, royal is what I usually use...I just don't want any of them to pop off!

What is the name of the cream cheese recipe you mentioned? Are all the cream cheese recipes basically the same?
