I'd add a heaping tsp of cinnamon and 1/4 tsp of nutmeg.

I use 2 tsps of ground cinnamon and 2 tsps of cinnamon flavouring (liquid) McCormick makes a good one. I also add couple of tablespoons brown sugar because I find that it helps to bring out the cinnamon. I also taste as I go, because sometimes I like more cinnamon, and sometimes less. I hope that helps!

I agree with everything said here. Especially the tasting as you go. I got a little carried away last time I used cinnamon and it was WAY too much.

when i make my snickerdoodle cake or buttercream, i add cinnamon until i can smell the cinnamon in the batter. then i know its enough. and i've never had it turn out too much spice. thumbs_up.gif
