HI uk bakers,im having a littte problem at the moment can somebody rectify this for me my sister says im not taking long enough to mix my cake mix,from putting my butter in then the sugar then eggs and flour it takes me 15 mins is that about right ,how long does it take you to add all ingrediants.maybe this will stop the arguments thank you,

Are you mixing by hand (ie with hand held beater) or in stand mixer (ie kenwood)? When i would make a cake (madeira) by hand, from start to getting the cake in the oven would take me an hour. Using my kenwood mixer it now takes me 30 minutes. I would imagine if you're doing it this quickly you're probably not creaming your butter and sugar for long enough at the start - i usually beat on high speed for about 10 minutes (scraping the sides a couple of times) - you want the creamed mixture to have the consistency of mayo, light and fluffy and very pale, and minimal sugar granules - this is definitely the key to a good sponge.
