Not So Heavy And Dense Chocolate Cake?

I am still hunting for the perfect chocolate cake! I have tried a lot of great recipes, but most of them (dare I say) are almost too moist. I was looking for something a little more fluffy. A lot of them that I have made lately are pretty dense and a little "wet," especially when baked in larger pans. I used to really love Toba GArett's cake but then it stopped working for me (falling). I then went to the chocolate stout cake (but I subbed coffee for the beer), I tried sky high triple chocolate cake, epicurious double chocolate layer cake. They all actually taste pretty similar. I just can't quite find the right one. Of course I still want it to be moist though...a girl can dream right?

Thanks for the recipe, it looks delish! Have you actually made it?

I have tried the Hershey's recipe. It was actually the first scratch cake I made that I liked. EXCEPT every time I made it, it stuck to the pan!! I must have tried 3 times. I don't know what the problem was. Maybe I could give it another shot.

I baked this cake from the chocolate cake scratch off last year. It was submitted by Lita829. I found it to be really light and fluffy. I would have preferred a little less almond flavor, but the texture was great.

Deluxe Chocolate Cake
2 C sugar
1 C butter
3/4 tsp almond extract
2 tsp vanilla
3 eggs
2 1/2 C cake flour, sifted
1 C cocoa powder ( I use Hershey's Special Dark)
2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
2 1/4 C buttermilk

Preheat oven to 350 degrees F. Cream butter and sugar until light and fluffy. Add in extracts and combine. Beat in eggs, one at a time. Add combined dry ingredients, alternating with the buttermilk, in 4 additions, beginning and ending with the dry. Beat at medium speed for a minute longer. Bake 9" layers 45-50 min and cuppies 26-30 min.

This is my go-to recipe. Very chocolately taste, not too dense but lovely and moist.
