White Chocolate Melting

So I have been making cake balls for awhile now and was making some for a baby shower. I melt white chocolate chips and add a few pieces of the vanilla melts to mellow out the flavor. However, this time I could not get the chocolate to melt.

I usually put it in the microwave in time increments and this time it just thickened up and would not melt. I tried to do it in a double broiler as well, switched bowls, and tried someone elses microwave and it all did the same thing. I have never had this problem and at first I thought it was the microwave since I just moved, but since I tried someone elses and tried to double broiler and could not get it I am just stumped as to what to do now. I have to make some for the Baylor homecoming this weekend and need some help as to what to do.

It wouldn't melt as in stayed solid and in form or it wouldn't melt as in some melted but some parts were gritty and chunky? If it is the latter, it's probably because it got melted too much. I did this just last night, put some WC in the micro for a little bit too long and it got overmelted and chunky. Once it gets to that point, it's over. You have to melt some new WC. If it's just not melting at all, then that's just weird. I don't know what that could be.

I had the same issue last night. I put about a cup of WC chips in a microwavable measuring cup. Put is on 70% power for one minute. I stirred after 30 secs and then again at 1 minute. It was very thick. It was melted, but not the right consistency. I have melted it like this before and it was fine. I wish I knew the answer.

Levh, I have melted WC before and let it stay in the microwave too long and know what you are talking about. The clumpy, smelly mess that use to be WC.

I melted WC for cake balls last night and added some solid shortening (Crisco) to it first. It came out 'runny' enough to dip the balls in and get a smooth coat. I started the melting process in the microwave, finished up over a double boiler. After a while, it started to get thicker and was unmanageable, but I'm sure that was from keeping it over the heat too long.

Does WC seize? Maybe that's what happened to the OP?

I always add a little shortening with the WC and melt together. Comes out nice and smooth everytime. HTH

yes, that is exactly what it is doing, turning into a hard clump, it melts and then turns into like gritty stuff. I have never had it do this before. My mom said maybe it is the choc chips. I tried three bags lol! I did the same amount of time on all also.

For my cake balls i always add a little bit of bakers wax to the white choc once it is melted to help it dry faster and become shiney, but i tried this and it wouldnt even help. I might try some crisco in it tonight, other then that i have no idea what to do. Since everyone else is having the same problems maybe it is the choc chips. I usually put it in the microwave for about 45 sec and then again for about 20 sec until it is melted but this time it is turning into this mess in about 1.5 min. ughh!!

If it's gritty, then the chocolate has been over melted and yu can't recover from this - as the previous poster said, the chocolate has had it icon_sad.gif

I use a tablespoon of canola oil. It will loosen the mixture up. Very good with chips or almond bark. Keeps it glossy & a nice texture.

yeah it was definitly done with, but I just had no idea why it was doing this. The time I had it in there was about half the time i usually do. However, i made my cake last night and will be dipping them tonight so we shall see!!
