How To Ever Know If A Filling Recipe Is Stable At Room Temp?

I have been wanting to try some filling recipes and was wondering if they are stable at room temp and was wondering if there is a certain way to know if any filling recipes are stable or won't spoil at room temp?
Here are a couple I have tried or want to try
Key Lime Curd
6 tablespoons butter
1/2 c sugar
3 eggs
1 tsp key lime zest
2/3 c fresh key lime juice
Over low heat, melt the butter in a saucepan. Add the remaining ingredients and whisk continuously for about 8-10 minutes or until it forms a custard. Allow to cool then pour into a jar and refrigerate. The curd will thicken considerably as it cools.

pumpkin cream cheese filling
4 oz softened cream cheese
1/2 cup powdered sugar
then mix in 1/2 cup canned pumpkin
1 tsp cinnamon
1/4 tsp nutmeg and 1/4 tsp vanilla. Once mixed slowly add 1/2 cup whipping cream. Beat for 1-2 minutes. Refrigerate for 1-2 hours.

For this last filling I would use bettercreme instead of whipping cream.
