I've never worked with mousse so I don't know how well it would pipe. If you did end up putting them on cupcakes I would definately refrigerate them. I hope someone else can help answer your question

I recently made banana chocolate cupcakes with banana mousse filling and strawberry & banana mouse swirl on top(they're in my pics). I use either bettercreme or Instant whip mixed with 1 package of instant pudding, and 1/2 cup of milk. Delicious. HTH
